how do you identify a man from a female angel fish?

Sarah Bella

its hard to tell until they are ready to mate.   they have tubes that come out for taking care of business.  His is longer and pointier and hers is more blunt and square (maybe its the other way around) .   I don't know if it's a way to sex them, but my guys also seem to have chunkier forheads... they look more masculine

IMHO you must wait until they spawn to get 100% accuracy. Sarah Bella is right, male pointier, a little shorter and it dissapear faster than the female. Good luck
