I see some really wild looking aquariums on the Net.. was wondering if its possible to cut dwarf sag and other tall grass type plants so it stay low.. or would that kill the plant?

BigDaddy

You can trim them just like you would lawn grass... you might get some browning at the tips....

The key is good lighting.  With the right lighting (read HIGH) carpet plants stay short and carpet the bottom.  Not enough light, and they grow upwards to try to get more light.

Glosso is a perfect example.  Under high light, it spreads out like a blanket.  Under low light... it grows like a small bush
