One of the other things I wonder about is how did humans end up with so many variations? So many different races. We all seem to be the same biologically and yet visually there are clear differences. Why?

To keep life interesting.
Look at dogs how different they all are even though they evolved from Wolves. Mind you humans have had a big hand in how dogs have evolved.
