Location, location ....

I've noticed that a person's location no longer shows up along with their forum posts, although it still seems to a part of the member's profile. Was this a conscious decision or just another limitation of the new software. I used to find that information useful and/or interesting, especially when browsing the classifieds.

Just the way it is.  Most likely it's the theme that we are using.

For the classifieds there is a location field when entering items for sale.

my location is showing on my profile but I cannot change it.

You should be able to change it under "Profile" --> "Forum Profile Information".
